@TastesLikeTom will be guiding you through his Vegan Chickpea and Tahini Curry recipe. Whether you’re a veggie, a full time vegan or looking to have the odd day off the meat, this is the dish for you! It’s really quick, simple, packed full of healthy flavours and made with thing you may already have in the cupboard. It is also completely adaptable so if you do want to add extra things like sweet potato, grilled cheese or chicken, you can!
THIS RECIPE is GLUTEN FREE – Just double check your rice and the tahini as sometime gluten is added to thicken.

Ingredients
Olive oil
Chickpeas 1 14oz can
Courgettes 2-3
Corn 2 whole cobs or frozen
1 Red Onion (White onions are fine – Shallots even better!)
Ginger – 1inch (or the ready pureed versions)
Garlic – 2-3 cloves
Curry Powder 1.5 tablespoons
Cayenne Pepper 1 tablespoon
Coconut Milk – 1 14oz can
Tahini –2 tablespoons (or substitute with peanut butter, cashew/almond butter)
Lime 1-2
Fresh Coriander
Basmati Rice – 2 cups
Optional Extras
Sweet potato x1
Cauliflower/broccoli
Garden peas
Mushrooms
Halloumi or Paneer/other hard grilling cheese (Vegan options available)
Sesame seeds
Chilli flakes
Crispy onions
Equipment - This is predominantly a one pan recipe so you don’t need a lot of equipment
One large pan, preferably with a lid but not essential
One large Saucepan – for the rice!
One grater or zester
One sieve/strainer
Chopping board
