Online Cooking Class - Veggie 'Meatballs'

Looking for some inspiration in the kitchen? Our new online cooking classes will help you cook like a pro in no time!

@TastesLikeTom will be guiding you through his best veggie 'meatballs' recipe.

The session will run over Zoom and you will be sent the link shortly before the event starts.

What you'll need:

  • Aubergines – 2-3 (You want about 1kg)
  • Olive oil – 150ml
  • Breadcrumbs – 100gms (about 3 slices of bread)
  • Ricotta – 100gms
  • Parmesan 75g - plus extra for garnish 
  • Fresh Parsley 3 Tablespoons
  • Eggs - 2
  • Garlic – 6 Cloves
  • Fresh Basil 3 tsp
  • Tinned Tomatoes - 2 (400ML) cans
  • Tomato Puree - 2 Tbsp
  • Caster sugar – 2 Tbsp
  • Chilli Flakes 1/2tsp
  • Paprika 1/2tsp
  • Oregano – 1tsp
  • Olives – optional
